Mary Elizabeth "Betsy" Stachura was born December 6, 1957 in Worcester
Massachusetts to Joseph P Stachura and Lillian R Morris Stachura. Betsy is survived
by two sisters and one brother, Susanna Stachura- Schulman, Anne Stachura-Girard,
and Joseph P. Stachura Jr. One brother, Bernard Morris Stachura is deceased. Betsy
was especially proud of her uncle, Father Thaddeus Stachura who recently celebrated
his 60th year as an ordained Priest. Betsy grew up in Uxbridge, MA and went to
Johnson and Wales College where she received her degree in Culinary Arts. Later she
would meet her future husband, Charles, and they would be married in Uxbridge MA in
January of 1986. After living in New York as a newly wed and working as a Sous Chef
for Mayor Ed Koch, Betsy would move with her husband to Mississippi to the Carraway
family home. She would work again as a Sous Chef under Governor Ray Mabus and
would later be involved in starting the Culinary Arts Program at Hinds Community
College. Betsy and Charles would have one child, Francis, born in 1997. Betsy loved
to spend time in world class museums poring over the decorative arts and was a gifted
jewelry designer. She loved working with children and led Vacation Bible School and
Parish School of Religion classes at St. Therese Catholic Church. She was actively
involved for years in the Pro Life movement in Jackson. Most recently she and her
husband Charles became members of the Cathedral of St. Peter the Apostle in
Jackson.
